At the moment I'm working on a Marienburg warband for Mordheim and I've got the colour scheme down for the rest of the henchmen and characters but I've chosen to include a Warrior Priest of Sigmar (don't ask why). I'm gonna use this reaper mini and I've decided on everything else of the mini except for the face and hair. The armour will be and weapon will be done in NMM oxidized bronze as here. The robes will be a bluey black colour. Now, the flesh and hair lead me to my main problems. I've tried a few things for pale skin but it's often turned out looking unnatural, I really want a quite ashen, pale face suitable for someone who's fought and stood against the worst there is to offer. For the hair I was thinking maybe a vibrant orange to contrast the rest of the model but any suggestions for hair colour would be appreciated.

Here's what i would try;
Skin is transparent, and the coulor we normally associate with it is down to blood beneath the surface. If I interpret what you're saying correctly, you want that drained look, literally drained of blood.
Start with a dark, cool base coat. Black, green or dk blue would be good. Use a pale flesh colour, one which doesn't have too high a red content. Something like a mix of citadel elf flesh and bleached bone would do. Apply this thinly, allowing the base coat to show through. You could dry brush it on, or use thin glazes, so long as your base coat is showing through. note "through"; i don't mean you should leave patches of it uncovered, but rather have your flesh coat applied transparently enough for the base to still be having an effect.
Stay away from the warm, reddish shades that would normally be used for shading (eg flesh wash) and shade again with blues, grays, and black. Highlight with paler version of flesh coat. Higher highlights up to white.
Orange, with the pale skin, bronze and blue/black robes would look good. rather than a vibrant orange though, I would try for a distressed kind of look, hair which has been deep auburny shade originally, now streaked with gray / lighter colour
Give it a whirl, and lets' see some pics!

Thanks PitYak, I've never really thought of it like that.
I'll try it on the some spare heads, along with some other methods I've been able to glean from people and post some pics later in the week.
The mini itself won't start until my Vallejo paint arrives in the mail, I need that for the NMM.
After actually taking a closer look at the mini in the pewter so to speak, I've realised that he has a travelling cloak on top of his robes on top of his armour that hasa tabard going under his robes and travelling cloak. What do you reckon for the coat, a dark leathery colour or a deep red ?

Gut instinct is leather, but then I like painting leather, and tend to over use it in my own minis! I think either one could work, quite similar anyway deep red and leather

I had a couple of tries but they ended kind of shamefully, so Halbarad was relegated to me closet but I've just dug him out and I'm going to strip him and have another go.

For very pale coloured flesh I usualy paint it pase colour elf flesh and give it a slightly moist dry brush with skull white. I should add that the only times I have used this flesh colouring is on vampires (blood dragon) and severed heads. its the colour I would use if I was painting Darkelves flesh also.
if your going to paint the hair bright orange start with a darker flesh tone so the places where hair and flesh meet look a little more natural. alternatively paint a thin darker flesh line around said hair skin join as a black outline will look a little suspect.
