You can thin with water, but you do have to be careful of tide marks.
For the science minded, you need to reduce the surface tension of the water / ink mix to prevent tide marks and pooling. Any detergent will do this to some extent, I like windscreen washer fluid, about 10:1 - 20:1 with water (a few drops in a shot glass of water)
